It seems as though people are in a rush to do everything and get everywhere these days, and a consequence of this hurrying, people are replacing meals with snacking. Nielsen data puts snack sales at $374 billion globally for the year ended March 2014 – a growth of 2 percent year-on-year.

Debates about gluten’s nutritional qualities aside, there’s no denying the demand for gluten free products is on the increase. According to Coeliac New Zealand, it’s growing 26 percent per year and putting the pressure on retailers, restaurants, cafes and manufacturers to cater to Kiwis’ changing palettes.
