Debates about gluten’s nutritional qualities aside, there’s no denying the demand for gluten free products is on the increase. According to Coeliac New Zealand, it’s growing 26 percent per year and putting the pressure on retailers, restaurants, cafes and manufacturers to cater to Kiwis’ changing palettes.
